Celebrate Chocolate Cupcake Day — You Know How
If you didn’t know that today is National Chocolate Cupcake day — we are here to tell you! We’re also here to give you the perfect excuse to indulge in the chocolaty goodness that is a chocolate cupcake.
Luckily for us, our dear friend and Wellnessmats Mats fan Chef Duff Goldman is a master of the art of pastry, cake + cupcake baking. We’ve found a chocolate cake recipe by Chef Duff that we know will make awesome cupcakes. Rumor has it…Chef Duff enjoys creating a good full sized cake more than a baby cupcake. He’s even made a cake large enough to feed 45,000 people — the size of a full size baby elephant. But for the sake of cupcake day…and for the sake of everyone (including all of us here at WellnessMats…) who LOVE cupcakes infinitely …let’s dig in.
Even though we’ve heard that Duff prefers cakes to cupcakes…we know Chef Duff has a soft spot for cupcakes after watching a preview of Duff’s Zombie Cupcake Attack!
Duff’s recipe calls for a sheet baking pan and a bake time of 35-40 minutes. For cupcakes, pour the batter into a cupcake pan instead and cook for 16-20 minutes — checking occasionally.
Charm City Chocolate Espresso Cake:
Recipe by Duff Goldman
3 cups flour
3 cups sugar
1 cup cocoa powder
2 teaspoons baking soda
¾ teaspoon baking powder
1 ¼ teaspoon salt
½ cups brewed coffee (hot)
3 ounces dark chocolate (melted)
3 eggs at room temperature
¾ cup oil
1 ½ cups buttermilk
- Preheat overn to 350 degrees F.
- Sift flour, sugar, cocoa powder, baking soda, baking powder, and salt in large mixing bowl and mix.
- Add in the buttermilk, coffee, eggs, and melted chocolate. Mix until batter is uniform.
- Grease + flour a half sheet pan (or two 8” round pans) + pour in the batter
- Bake for 35-40 minutes (after 20 minutes, check the cake + turn the pans)
- Let cool before serving.
